Sugar-Free Cherry & Almond Tart

Vegan, Raw, Dairy-Free

This festive tart has been inspired by Christmas. Sweet gooey base made from almonds, roasted hazelnuts and delicious ‘caramel like’ Medjool dates. Layered with homemade marzipan and sweet, juicy cherry mousse. All topped with crunchy almond flakes and 100% cacao sugar-free dark chocolate. Making tart like that is super easy as it is raw, so no baking required. Cherry mousse can be either cooked as per recipe or made by blending raw cherries with the rest of the ingredients. You may need less or nearly none water to keep the mousse thick.

To make this tart, you need only some basic ingredients, easily accessible from the supermarket like dates, nuts, coconut oil, cherries, maple syrup. To lower the amount of sugar I have used erythritol – 0 calories sweetener. If you do not have it at hand do not worry, just use another natural sweetener like stevia, maple syrup or use local honey. There is no nastiness in this tart. No flour, just nuts so everyone on a gluten-free diet can happily indulge into this guilt-free pleasure. Instead of palm oil and sugar, I have used organic raw coconut oil, pure maple syrup and erythritol. If you are dairy intolerant – some good news for you! You can sink your teeth into this tart with no regrets as it contains no dairy, only pure coconut milk.

If you love Christmas like me, and every flavour that reminds this beautiful time of family gathering, sharing presents and happiness, then you will fall in love with this tart. What is even better if you want to send your taste buds to the Disneyworld then use sour cherries or raspberries and dry roast almond flakes before sprinkling on the top.

One piece of tart has got around 214 calories and over 4 grams of fibre, that will fully satisfy your sweet tooth without making you feel guilty. It will also nourish your body by providing a lot of potassium, calcium, iron, manganese, selenium and vitamin E. Sweet, raw, sugar-free and dairy-free raw cake you can enjoy with a huge smile on your face! How to make it? Recipe below. Enjoy!

Orange & Cinnamon Sugar-Free Crêpes

Sugar-Free, Gluten-Free

This morning it was very gloomy outside, rain was pouring like a crazy and the puddles couldn’t handle the amount of water falling angrily from under the heavy clouds. I looked through the window and knew that all I want is nice warm cinnamon and orange flavoured fluffy crepe with delicate cream, topped with some juicy oranges and sweet blueberries.

I quickly ran downstairs… Looked if all my healthy ingredients are in a kitchen cupboard… Flour?… In! Milk?… In! Eggs?… Proudly standing at the bottom of the fridge. In! Banana, quietly begging to be used, as little freckles have already started to show up on its yellow skin. Even orange decided to join the morning party. Luckily to make this pancake batter I didn’t need any complicated ingredients and making them took me less than 15 minutes. All the batter ingredients need mixing in the blender for a minute, then frying and voila!

No oil needed to make this Crepes! Would you believe that whole portion has only 6 grams of fat?! I call these crepes FIT, as they are a good sweet alternative for everyone who wants to lose some weight or maybe is looking for a nice alternative for a healthy breakfast.

Portion like on the picture has got only 343 calories and 24 grams of proteins. It’s a perfect idea for a sweet dessert or breakfast with a great ratio of protein-fat-carbohydrates.

How come these crepes has got only 343 calories and still look so improperly delicious? By using the secret ingredient – erythritol! Zero calories sweetener that brings 70% of the sweetness of the sugar, without loading your meal up with unnecessary calories. These crepes will satisfy your sweet tooth and thanks to the high content of proteins, they will keep you full for longer. Did you know that the more protein in your meal, the more calories your body burn? Is it a magic? No way! Proteins are harder to digest, so your body needs to do an extra job to break them down… High protein content comes mainly from high protein Greek yogurt. If you are dairy intolerant you may wish to swap it for organic soy yogurt or unsweetened coconut yogurt. After filling in your crepes, fold them or roll up the way you prefer most. Did you know that apparently the most popular way to eat Crepes in France is by folding, but actually their name comes from greek crispos , that means ‘rolled up’. What a coincidence… 😉 But enough talking as I bet you have started feeling hungry already 😉 Let’s make these beauties quickly now, yay!

Sugar-Free Raw Mince Pies

{Vegan, Sugar-Free, Dairy-Free}

Delicate, infused by fresh lemon juice Mini Mince Pie base, filled with the unique mixture of sweet crunchy figs, slightly sour cranberries, refreshing orange juice and festive spices, will take you back to the last Christmas spent with the loved ones in front of the crackling fireplace…

These little refined sugar-free raw Mince Pies are dairy-free and 100% Vegan. No nasties in these bites, no trans-fats,  no palm oil, no dairy either.

Would you believe that when I first moved into England a few years ago I thought that Mince Pies are made with real mincemeat? Hahahaha… It wouldn’t really surprise me if it was true, as Pigs in Blankets, Pork Pies and other Puff Pastry savoury bites are very popular in this country.  For years I was avoiding Mince Pies like the plague until somebody finally told me that they are filled with the mixture of dried fruits and aromatic dried spices. I still wasn’t much convinced but after investigating ingredients I have decided to challenge myself with recreating these beauties in a healthiest possible, sugar-free version.

Now I know that it was the best decision I have ever made and I can happily share the recipe with you. When buying dried fruit I always scan with my eyes quickly labels… Why? Because recently so many dried fruits are sweetened by refined sugar or treated with potassium sorbate. To keep these festive bites sugar-free I have sprinkled them with powdered erythritol (0 calories sweetener).  I tend to buy the crystal version and use the blender to make as much powder as I need. The sweetness of erythritol is around 70% so you may need to sprinkle quite generously your Pies. Good news?! You can get crazy with sprinkling, as the amount of calories stays the same!

This bite will be a highlight of every Christmas party. It will satisfy your sweet craving and because it is packed with great, healthy ingredients it will make you feel amazing rather than guilty! Is there anything better on a cold day than wrapping yourself in a fluffy blanket with a cup of warming tea accompanied by the healthy fruity Mini Pie? Enough of talking… Let’s make it!

Strawberry Guilt-Free Crêpes

What is the first thing that pops into your head when you wake up?…

I always think ‘what am I going to have for a breakfast’! Quickly running down the stairs I check if all basic ingredients are in my pantry. If so, then it is the perfect reason to make my sweet strawberry crêpes. From all different flavours, this one has got a special place in my heart, as strawberries are one of my favourite, low sugar fruits. They are perfect not only for snacking, but I do love them most as a topping on my pancakes or crêpes. All together with cream, they create the combo that is soooooo hard to beat.

Perfect for breakfast or as a dessert. Especially when you’re on a diet or you want to lose weight, this high protein version of crêpes will satisfy your sweet tooth without making you feel guilty.

How to make these crêpes, guilt-free?

Over the past five years, I think I have discovered a few tricks, that may help you with creating sweet breakfasts and desserts and what is more… feeling absolutely good after leaving the plate empty!

One of the best ideas is to use stevia drops. Stevia is a natural sweetener that will make your sweet treats and desserts irresistibly sweet without adding extra calories. You can also use powdered stevia, but always double check the label, as very often it can be mixed with other additives, which may not be so beneficial to your health.

The creaminess of the batter has been achieved by using a fresh banana. Using banana helps to make batter naturally sweet without adding extra sugar. Bananas have got many health benefits, for example they contain a huge amount of potassium and are a good source of tryptophan. One of the less known facts is that bananas are one of few alkaline fruits that may be worth implementing into your diet.

To increase the protein ratio of this breakfast pancakes, I use high protein yogurt. Another note on the side, when buying high protein yogurt look on the label, what is the sugar content per 100g if it is lower than 4g, that’s a good choice. Natural yogurt can be slightly sour, so to combat this I use ricotta cheese and mix it into the yogurt, which helps in making it creamier and cancels out the sourness. The result is amazing! Altogether with caramel stevia drops and vanilla powder, it creates a combo that will easily steal your heart.

Using strawberries is not accidental either, as they are deliciously sweet and at the same time are a great source of Vitamin C. They are also one of the lowest in sugar berries. Sprinkled with powdered erythritol, that has around 70% of the sweetness of sugar, without adding any extra calories will be a good choice for everyone who wants to eat sweet and stay fit.

One portion (2 large crêpes) contains only 357 calories, with stunning 26 g of proteins and only 17 g of sugar, providing you with over 100% of the daily recommended value of Vitamin C.

You do not need any oil in the batter, nor for frying, so the amount of fat is shockingly low – only 8 g.

Now you know the trick in making the slimmer version of crêpes, that will satisfy you for longer without adding an enormous amount of sugar to your diet.  All you need is 10 to 15 minutes… So hurry up! As your pan is heating up! Enjoy!

Walnut Brownie with Hot Blueberry Mousse

{Low Carb, Vegan, Sugar-free, Gluten-free}

Imagine you can indulge in a rich crunchy chocolatey brownie with a velvety coconut cream and a hot blueberry mousse and you don’t even have to feel guilty afterwards… This recipe will make that dream come true!

This flourless brownie is extremely moist and chocolatey with a little crunchy accent of walnuts. Made by using black bans. It’s a great alternative if you are on the gluten-free diet, but still, want to enjoy a sweet dessert on a daily basis. This brownie, apart from being rich in proteins and fibre, is extremely low in calories. I have used erythritol (sweetener with ‘0’ calories). Alternatively, you may want to use natural stevia to maintain the level of sweetness without adding extra calories.

One square of this brownie has three times fewer calories than traditional one! Less than one gram of sugar and around one-fourth of your recommended daily fibre intake. It provides you with an astonishing 6 grams of proteins per serving!

The addition of walnuts makes it nice and crunchy. Organic cacao, as a basic ingredient, will give your brownie a rich and full chocolatey character. To give it a moist texture you can top each square with a spoonful of coconut cream. Covered generously with hot blueberry mousse, this delicious treat will send you to the next level of indulgence!

The key ingredient, black beans, are rich in vitamins and minerals. Mainly folate, manganese, magnesium, thiamin (vitamin B1) which are very important in maintaining a healthy heart and nervous system. The high fibre content also prevents overeating. It will make you feel fuller for longer and help you to stay on track whilst battling shedding those stubborn pounds. The recommended daily amount of fibre you should consume to keep you healthy is around 25 – 30 g per day. One cup of black beans (with the content of fibre being around 15 g per cup) brings you halfway there!

Fibre is vital, not only when it comes to weight loss, but also in cleaning our digestive tract. It removes harmful substances such as waste products and toxins out of our body. It improves metabolism and balances our sugar levels. Not only that, but it’s also a great protein source, especially for vegetarians and vegans whose diet sometimes may be lacking in muscle building proteins. The main source of carbohydrates in this brownie is starch. Starch is a complex carbohydrate – which won’t cause sudden sugar spikes, compared to white flour or caster sugar. Instead it stabilizes sugar, keeping it under control allowing you to keep the same energy level throughout the day without crashing.

Keeping all these benefits in mind, indulging in a sweet treat like this one can’t hurt, am I right? So, let’s make it then! All you need is just one food processor and up to 10 minutes of your time to make the brownie dough.

Walnut Brownie With Hot Blueberry Mousse

All you need to make the dough is:
  • 2 Tbsp chia seeds
  • 5 Tbsp water
  • 440 g black beans (rinsed and drained)
  • 3/4 cup cacao powder (less if you like less chocolatey flavour)
  • 1 tsp vanilla powder (organic, pure)
  • 3/4 cup erythritol (powdered)
  • 1 1/2 tsp baking soda
  • pinch of salt (Himalayan)
  • 40 ml coconut milk (nut milk) (optional)
  • 1/2 – 3/4 cup walnuts

Topping:
  • 150 – 200 g coconut cream (or solid part of coconut milk)
  • 150 g frozen blueberries
  • stevia drops/erythritol
  • 1 tsp potato starch (optional chia seeds)

  1. Preheat the oven to 180°C.

  2. In a mug, mix 2 Tbsp of chia seeds and 5 Tbsp of water. Put it aside for about 5 minutes until it thickens.

  3. In a powerful blender mix in rinsed and drained black beans, cacao powder, vanilla powder, erythritol, baking soda, and a pinch of salt (I tend to use Himalayan Pink Sea Salt as often as I can) and the ‘chia egg’ mixture. Keep blending until a smooth dough is created. If you feel like the mixture is too thick add a splash of nut milk (I tend to use coconut milk) and keep blending for a little longer.

  4. When the mixture is ready, mix in coarsely chopped walnuts. Depending on how crunchy you want your brownie to add either half or ¾ of a cup into the brownie mixture. I added only ½ a cup.

  5. Line a baking tray (20cm x 25cm) with greaseproof paper. To get crunchy edges, grease the paper with coconut oil. Place the mixture into the baking tray and slightly press from the top.

  6. Put the finished mixture in the oven and bake for around 25 – 30 minutes until the cocktail stick (or knife) inserted into the brownie remains clean.

  7. Let it cool for 10 – 15 minutes and be extremely careful when removing from the tin as it may be very brittle, soft and easily break into pieces. Ideally, allow it to cool in the fridge to make sure it effectively sets. When it’s fully set, divide into square pieces and top with coconut cream or milk solids and a hot blueberry mousse.

  8. To make blueberry sauce simply heat up frozen blueberries in a saucepan with a bit of water. Add stevia drops or erythritol (according to your sweet tooth). When blueberries softened, mix in 1 tsp of potato starch previously dissolved in a cold water. Keep stirring until mixture will thicken.

  9. Real chocolate lovers can swap blueberries mousse and cream for dark melted chocolate… Simply melt on a low heat or in a double boiler dark, ideally 100% cacao chocolate, this way keeping the brownie completely sugar-free. Enjoy!

Top TIPS!
  • Always allow the brownie to cool  – as it needs time to stick together;
  • Swap walnuts for the nuts of your choice;
  • For a lower calorie version swap full-fat coconut cream with coconut yoghurt sweetened with stevia and top with fresh raspberries or strawberries (high in anthocyanins), skip the walnuts.

Who doesn’t like Christmas? Time spent with the family and friends, in front of the fireplace, joking an laughing… The smell of the freshly peeled orange and the sound of the Christmas carols coming from the radio in the kitchen corner… These Raw Chocolate Mini Pies will be a perfect addition to the Christmas fete. Sugar-free, dairy-free, gluten-free and vegan. Packed with health benefits Mini Pies will fully satisfy your sweet cravings.

Chewy pecan and date base, infused with freshly grated orange zest and rich cacao, covered with smooth chocolate cream. Even peanut butter has its place in the cream layer!  Homemade orange caramel makes these pies irresistible. You can go even further and grate some more zest on top each raw cake. In this way, you will intensify the orange flavour sending your taste buds to the Disney World. These guilt-free mini pies contain loads of healthy fats, therefore they need to be eaten mindfully.

To make these festive treats more skinny – swap maple syrup for maple flavoured monk syrup. This syrup will be beneficial for everybody on a diet or who struggle with high blood sugar levels. By making a thinner base of the pies and skipping topping (truffles and melted dark chocolate) you are cutting a few calories off. What is more, for making skinny caramel layer, feel free to use nut drink or diluted coconut milk. They are fairly easy as all you need is food processor bowl, no cooking skills required. If you like Christmas Treats and fruity flavours, you may also like my Sugar-Free Raw Mince Pies or Marzipan & Cranberry Bites.

  1. In a powerful blender, coarsely crush cashews and pecans (make sure the texture is not too fine). Next, add pitted Medjool dates and sea salt. Blend until sticky dough creates.
  2. Line 7" round baking tin with baking paper (you can use 8" too, but then the cake will be not as high). Pour the base dough and firmly press from the top using the spatula. Put aside.
  3. Place the dates in a tall mixing bowl, cover with the hot water (30 - 40 ml) and leave until soften. Put aside. In a meantime make cashew cream.
  4. Without washing food processor add all the caramel layer ingredients and keep blending until really nice and smooth texture creates. It may take a while, depending on the strength of your food processor. Keep scraping sides of the food processor bowl from time to time.
  5. Adjust the sweetness of your cream by adding more maple syrup or more lemon juice. Pour on top of the date base and flatten with spatula or tablespoon. Put aside.
  6. To make the caramel layer blend dates, water, peanut butter (almond butter) and a pinch of salt. Add enough water to make a smooth caramel but not too much as the caramel may turn too runny. Place on top of the cashew base and make a few swirls. Top with salted peanuts to perfectly contrast the sweetness of the cream and drizzle with sugar-free dark chocolate (optional). Enjoy!
