  • 10 g coconut oil virgin
  • 1/8 tsp salt pink Himalayan
  • 1/4 tsp vanilla powder pure organic if possible

  • 100 g almonds ground
  • 1 Tbsp maple syrup pure
  • 2.5 Tbsp erythritol powdered
  • 3 Tbsp coconut milk canned, only solid part
  • 1 tsp almond extract
  • 1/8 tsp salt pink Himalayan
Cherry Mousse:
  • 200 g cherries frozen. pitted
  • 1 Tbsp erythritol powdered
  • 5-6 Tbsp water
  • 1 Tbsp lemon juice freshly squeezed
  • 2 Tbsp chia seeds
Topping:
  • 15 g almond flakes
  • 3 squares dark chocolate melted (optional)

Method

Start off by making the cherry mousse:
  1. Add cherries to a saucepan, with erythritol, water. Cook until cherries start to soften.
  2. Mix in the lemon juice and chia seeds. Add more erythritol for extra sweetness.
  3. Take off the heat and put aside. You can also place the mousse in the fridge so it can nicely set.
Make a base:
  1. Place hazelnuts in your food processor and blend until finely crushed. Add the rest of ingredients and blend until the nice sticky dough creates.
  2. Use 8" cake tin layered with parchment paper. Press the dough into the bottom of the form and flatten with the spatula.
  3. In a separate bowl mix in all the marzipan layer ingredients, stir well and spread on the base layer. Top with the cherry jam and sprinkle almond flakes. Drizzle with melted sugar-free chocolate (optional).
  4. Place in the freezer to set for about 1-2 hours. Store in the fridge for up to 4 days. You can also keep this raw cake in the freezer and enjoy it even for longer!
